Silverthorn focuses exclusively on the production of Cap Classique, South Africa’s traditional method sparkling wine, with a limited annual production of just 44,000 bottles.

The estate’s terroir—once an ancient seabed—features lime-rich, rocky shale soils that echo the famed Champagne region of France. With a combination of old Chardonnay vineyards and a pioneering spirit, Silverthorn made the bold decision in 2004 to specialise entirely in bubbly. Each bottle is a reflection of this vision, showcasing the perfect balance of finesse, texture, and vibrant acidity. The wines are crafted with an “Afropean” ethos—merging European tradition with African storytelling, landscape, and culture.

While Silverthorn does not offer a formal restaurant, guests are encouraged to enjoy a leisurely tasting with light bites amidst breathtaking views. Picnics or platters can often be arranged in advance, allowing visitors to pair their Cap Classique with scenic tranquillity and riverside charm. The experience is relaxed and intimate, ideal for celebrating a special moment or simply unwinding in the countryside.
