Darling is a small West Coast wine region an hour's drive north of Cape Town. The Atlantic is close, and its cooling influence is what defines the wines — fresh, bright whites and easy-drinking reds that carry a salty, coastal edge. The region is as famous for its wildflowers as its wine: in spring, the hills burst into colour, and the combination of wine tasting and flower-viewing makes for one of the Cape's most distinctive day trips. The estates are few and far between, but they're charming, unhurried, and distinctly West Coast in character. Come in August or September for the flowers, stay for the wine.
