Leeu Passant’s winemaking philosophy revolves around achieving balanced intensity. The goal is to bottle wines embody texture, freshness, structure, and aromatic complexity. Embracing modern minimalist winemaking, the process involves using indigenous yeast, eschewing enzymes or tannins, and prioritizing high hygiene standards and a profound understanding of malolactic fermentation.
