About Tim Hillock Wines

In the heart of the Swartland, nestled at the foot of the Kasteelberg, Tim Hillock Wines is a boutique winery driven by curiosity, passion, and a love of honest winemaking. Tim trained in viticulture and oenology at Stellenbosch University alongside fellow winemaker Albert Van Niekerk, before settling on his uncle’s farm in this renowned wine region. Here, he shares cellar space with some of South Africa’s most celebrated names—including Callie Louw (Porseleinberg) and Donovan Rall—benefitting from their mentorship while crafting his own distinctive style.

Wine

Tim Hillock produces expressive, small-batch wines that reflect the individuality of each vineyard site. He works mostly with Chenin Blanc and Syrah, but also explores special parcels of Grenache, Cinsault, Tinta Barocca, and Pinot Noir (sourced from the cool-climate region of Ceres). His approach is one of minimal intervention: natural fermentations, whole-bunch pressing, foot stomping, and ageing in a thoughtful mix of concrete, amphora, and large oak barrels, including prized Stockinger casks. Tim’s production remains intentionally small, a reflection of his commitment to quality over quantity and his hands-on, site-driven philosophy. Order their wine here.

Wine Tasting

Wine tastings at Tim Hillock Wines are available by appointment only and should be booked at least 48 hours in advance. A visit to the cellar offers an intimate look into the craftsmanship behind each bottle and a rare chance to engage directly with the winemaker.
